Instructions

  1. In a large mixing bowl, mash the ripe banana until smooth.
  2. Add the whole wheat flour, baking powder, cinnamon, and salt to the bowl and stir to combine.
  3. In a separate bowl, whisk together the milk, egg, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Don’t over-mix; it’s okay if there are a few lumps.
  5. Heat a skillet over medium heat and add a small amount of coconut oil or butter to coat the pan.
  6. Pour about 1/4 cup of batter for each pancake onto the skillet and cook for about 2-3 minutes per side, or until golden brown and cooked through.
