Ingredients
3 large sweet potatoes, peeled and cubed
3 tablespoons pure maple syrup
1½ tablespoons olive oil
1 teaspoon ground cinnamon
½ teaspoon sea salt
Optional: ⅓ cup chopped pecans for added crunch
Instructions
Preheat your oven to 425°F (218°C). Line a baking sheet with parchment paper.
Peel the sweet potatoes and cut them into evenly sized cubes for even roasting.
In a large bowl, whisk together the maple syrup, olive oil, cinnamon, and sea salt.
Add the sweet potatoes to the bowl and toss until each piece is fully coated.
Spread the sweet potatoes on the baking sheet in a single layer to prevent steaming.
Roast for 25–30 minutes, flipping halfway through, until the edges are caramelized and crisp.
(Optional) Add pecans in the last 10 minutes of roasting for a toasted crunch.
