  • 8 crushed Oreos

Instructions

  1. Make the crust: Crush the Oreos in a food processor or bag until fine. Mix with melted butter and press into the bottom of a 9-inch springform pan. Bake at 325°F (163°C) for 8 minutes, then cool.
  2. Prepare the filling: Beat cream cheese and sugar until smooth. Add sour cream, cocoa, vanilla, and red gel food coloring. Mix until combined.
  3. Add eggs one at a time on low speed. Stir in heavy cream and fold in crushed Oreos.
  4. Bake the cheesecake: Pour filling over the crust. Wrap the pan in foil and place in a water bath. Bake at 325°F for 60–70 minutes, until the edges are set and the center jiggles slightly.
  5. Cool: Turn off oven, crack the door open, and let it rest for 1 hour. Chill overnight for the best texture.
  6. Decorate: Top with whipped cream, Oreos, or chocolate drizzle before serving.

Notes

Use gel food coloring for an intense, even red hue.
