Instructions
- In a large bowl, mix together the flour, sugar, baking powder, cinnamon, nutmeg, and salt.
- In a separate bowl, whisk together the pumpkin puree, milk, egg, melted butter, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir until combined. Be careful not to over-mix.
- Heat a griddle or non-stick pan over medium heat and lightly grease it.
- Pour 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface and the edges start to look set, about 2-3 minutes.

Notes
