  • Author: freshrecips
  • Total Time: 15 minutes
  • Yield: 8 pancakes 1x

Description

Start your day off right with these easy-to-make pumpkin pancakes! Packed with fall flavors like cinnamon and nutmeg, these fluffy pancakes are perfect for cozy mornings. They’re a great way to sneak in some extra vitamins and fiber while enjoying a comforting breakfast. Top them with maple syrup or whipped cream for an indulgent touch!

Ingredients

Scale
  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup pumpkin puree
  • 1 cup milk (or dairy-free option)
  • 1 large egg
  • 1 tablespoon melted butter (or dairy-free option)
  • 1 teaspoon vanilla extract
  • Maple syrup or whipped cream (for topping)

Instructions

  1. In a large bowl, mix together the flour, sugar, baking powder, cinnamon, nutmeg, and salt.
  2. In a separate bowl, whisk together the pumpkin puree, milk, egg, melted butter, and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry ingredients and stir until combined. Be careful not to over-mix.
  4. Heat a griddle or non-stick pan over medium heat and lightly grease it.
  5. Pour 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface and the edges start to look set, about 2-3 minutes.
  6. Flip and cook for another 1-2 minutes, or until golden brown.
  7. Serve warm with maple syrup or whipped cream.

Notes

For a lighter version, you can swap out the all-purpose flour for whole wheat flour and use a sugar substitute. You can also add chocolate chips or chopped nuts to the batter for extra flavor and texture.
