Ingredients
Scale
- 3 ripe plantains (peeled and sliced)
- 4 cloves garlic (minced)
- 1/4 cup olive oil (or vegetable oil)
- 1/2 teaspoon salt (or to taste)
- 1/4 teaspoon black pepper
- 1/4 cup chicken broth (optional, for extra flavor)
- 1/2 cup pork cracklings (optional, for added crunch)
- 2 tablespoons butter (optional, for extra richness)
- 1 tablespoon fresh cilantro (chopped, optional for garnish)
Instructions
- Peel the plantains and cut them into 1-inch slices.
- Heat a large skillet over medium heat and add olive oil. Once hot, add the plantain slices and fry them for 3-4 minutes on each side until golden brown and crispy.
- Remove the plantains from the skillet and set them aside to drain on paper towels.
- In the same skillet, add the minced garlic and cook for 1-2 minutes until fragrant.
- In a large bowl, mash the fried plantains with a potato masher or fork. Add the cooked garlic, salt, pepper, and chicken broth (if using).
- If you want extra crunch, fold in the pork cracklings. For a creamier texture, add butter and continue mashing until smooth but slightly chunky.
- Transfer the mofongo mixture into a small bowl or mold and press it to form.
- Serve immediately, garnished with fresh cilantro if desired.
Notes
- If you want a meatless version, you can skip the pork cracklings and add more seasonings to enhance the flavor.
- Mofongo is often served as a side dish with roasted chicken or seafood. You can also turn it into a main dish by stuffing it with shrimp, chicken, or even vegetables.
- To make it gluten-free, simply omit the pork cracklings or use a gluten-free substitute.
