The blend of savory flavors and the delightful texture of the plantains make this dish a true taste of Puerto Rico that everyone will love. Whether you’re new to Puerto Rican cuisine or a seasoned chef, this simple yet mouthwatering recipe will transport your taste buds straight to the Caribbean!

Ingredients

Scale
  • 3 ripe plantains (peeled and sliced)
  • 4 cloves garlic (minced)
  • 1/4 cup olive oil (or vegetable oil)
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • 1/4 cup chicken broth (optional, for extra flavor)
  • 1/2 cup pork cracklings (optional, for added crunch)
  • 2 tablespoons butter (optional, for extra richness)
  • 1 tablespoon fresh cilantro (chopped, optional for garnish)

Instructions

  1. Peel the plantains and cut them into 1-inch slices.
  2. Heat a large skillet over medium heat and add olive oil. Once hot, add the plantain slices and fry them for 3-4 minutes on each side until golden brown and crispy.
  3. Remove the plantains from the skillet and set them aside to drain on paper towels.
  4. In the same skillet, add the minced garlic and cook for 1-2 minutes until fragrant.
  5. In a large bowl, mash the fried plantains with a potato masher or fork. Add the cooked garlic, salt, pepper, and chicken broth (if using).
  6. If you want extra crunch, fold in the pork cracklings. For a creamier texture, add butter and continue mashing until smooth but slightly chunky.
  7. Transfer the mofongo mixture into a small bowl or mold and press it to form.
  8. Serve immediately, garnished with fresh cilantro if desired.

Notes

  1. If you want a meatless version, you can skip the pork cracklings and add more seasonings to enhance the flavor.
  2. Mofongo is often served as a side dish with roasted chicken or seafood. You can also turn it into a main dish by stuffing it with shrimp, chicken, or even vegetables.
  3. To make it gluten-free, simply omit the pork cracklings or use a gluten-free substitute.
