Ingredients
4 fresh salmon fillets (about 6 oz each)
½ cup pomegranate juice
1 tablespoon orange zest
2 tablespoons honey (or maple syrup for a vegan option)
1 tablespoon olive oil
1 garlic clove, minced
Salt and black pepper to taste
Pomegranate seeds (for garnish)
Fresh parsley or mint (for garnish)
Instructions
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
Prepare the glaze: In a small saucepan, combine pomegranate juice, orange zest, honey, garlic, and olive oil. Simmer on medium heat for 5–7 minutes until slightly thickened.
Season the salmon: Pat fillets dry and season with salt and pepper.
Brush with glaze: Place salmon on the baking sheet and brush generously with the pomegranate-orange glaze.
Bake: Cook for 12–15 minutes, depending on thickness. Brush again with glaze halfway through for deeper flavor.
Garnish and serve: Plate the salmon, drizzle with remaining glaze, and top with pomegranate seeds and herbs.
