- 4 chicken thighs or breasts (bone-in or boneless)
- 2 medium sweet potatoes, peeled and cubed
- 3 tbsp pure maple syrup
- 2 tbsp olive oil
- 2 garlic cloves, minced
- 1 tsp fresh thyme or rosemary
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp apple cider vinegar or lemon juice
- Optional: 1 apple (sliced), 1 tbsp honey, pinch of smoked paprika
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Whisk together maple syrup, olive oil, garlic, herbs, salt, pepper, and vinegar or lemon juice to make the glaze.
- Toss sweet potatoes in half the glaze, then spread them evenly on the sheet pan.
- Add chicken pieces to the pan, brush with the remaining glaze, and roast for 25–30 minutes, flipping once halfway through.
- Brush again with leftover glaze during the final 5 minutes for a sticky finish.
- Rest for 5 minutes before serving. Garnish with fresh herbs and enjoy warm.
