Ingredients
Scale
- 1 lb ground beef (or turkey, chicken, or a blend)
- 1/2 cup almond flour (or gluten-free breadcrumbs)
- 1/4 cup grated Parmesan cheese (optional, or nutritional yeast for dairy-free)
- 1 large egg
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon smoked paprika (optional)
- 1/4 cup finely chopped fresh parsley
- 1/4 cup finely chopped spinach (optional, for added veggies)
- Olive oil (for frying, if stovetop cooking)
Instructions
- Preheat your oven to 375°F (190°C). If cooking on the stovetop, heat a pan with olive oil over medium heat.
- In a large mixing bowl, combine the ground meat, almond flour, Parmesan cheese (or nutritional yeast), egg, garlic, salt, pepper, oregano, basil, paprika, parsley, and spinach (if using).
- Gently mix the ingredients together with your hands until evenly combined. Be careful not to overmix to avoid tough meatballs.
- Roll the mixture into evenly sized meatballs (about 1 inch in diameter) and place them on a parchment-lined baking sheet.
- If baking, cook for 18-20 minutes, or until the meatballs are golden brown and cooked through (internal temperature of 165°F). If frying, cook meatballs in batches in the heated olive oil for 7-8 minutes, turning occasionally until golden brown.
- Optionally, finish the meatballs in a simmering marinara sauce for an extra flavor boost.
- Let the meatballs rest for a few minutes before serving. Serve over your choice of sides, such as gluten-free pasta, rice, or zoodles.
Notes
- For a dairy-free version, replace Parmesan cheese with nutritional yeast.
- To add even more nutrition, consider mixing in grated carrots, zucchini, or mushrooms into the meatball mixture.
- These meatballs store well and can be refrigerated for up to 3 days or frozen for longer storage.
- Experiment with different herbs and spices to customize the flavor to your liking.
