This wholesome Einkorn Banana Bread combines the natural sweetness of ripe bananas with the nutty flavor of ancient einkorn flour. With just one bowl and a few pantry staples, you’ll bake a loaf that’s deliciously hearty and better for you.
Ingredients
1 cup white sugar
½ cup unsalted butter, melted
2 large eggs
1 tablespoon milk
1 teaspoon vanilla extract
1½ cups all-purpose einkorn flour, sifted
1 teaspoon ground cinnamon
1 teaspoon baking soda
1 teaspoon baking powder
¼ teaspoon salt
3 medium ripe bananas, mashed
½ cup chopped walnuts
Instructions
Preheat oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan with parchment paper.
Mix Wet Ingredients: In a large bowl, stir together sugar and melted butter. Add eggs, milk, and vanilla; whisk until smooth.
Combine Dry Ingredients: In another bowl, whisk together einkorn flour, cinnamon, baking soda, baking powder, and salt.
Mix Together: Add the dry ingredients to the wet mixture and stir gently until just combined. Do not overmix.
Fold In: Add mashed bananas and chopped walnuts, folding until evenly distributed.
Bake: Pour batter into the loaf pan. Bake for about 55 minutes, or until a thermometer reads 195°F (90°C) and a toothpick comes out clean.
Cool & Serve: Cool in the pan for 10 minutes, then transfer to a wire rack. Slice and enjoy warm or at room temperature.
Notes
Use very ripe bananas for the best sweetness and texture.
Don’t overmix einkorn flour; its delicate gluten makes bread denser if stirred too much.
Substitute coconut oil for butter to make it dairy-free.
Wrap cooled slices individually and freeze for up to 3 months.
