Ingredients
For the Chicken:
2 boneless chicken breasts, pounded thin
1 cup panko breadcrumbs
1 egg, beaten
½ cup all-purpose flour
½ tsp garlic powder
Salt and black pepper, to taste
Olive oil or cooking spray (for frying or air frying)
For the Caesar Dressing (no anchovies or wine):
½ cup mayonnaise
1 tsp Dijon mustard
1 small garlic clove, minced
Juice of ½ lemon
¼ cup grated Parmesan cheese
Black pepper, to taste
For the Sandwich:
2 ciabatta rolls or brioche buns
2 cups chopped romaine lettuce
2 tbsp grated Parmesan cheese
Extra Caesar dressing for drizzling
Instructions
Prep the Chicken:
Pound the chicken to even thickness and season both sides with salt, pepper, and garlic powder.Bread the Chicken:
Coat each breast in flour, dip in egg, and press into panko breadcrumbs until evenly coated.Cook the Chicken:
Pan-Fry: Heat olive oil in a skillet and cook 3–4 minutes per side until golden brown.
Air Fryer: Spray lightly with oil and cook at 400°F (200°C) for 8–10 minutes, flipping halfway.
Make the Caesar Dressing:
In a bowl, whisk together mayonnaise, Dijon mustard, garlic, lemon juice, Parmesan, and pepper until smooth.Assemble the Sandwich:
Toast buns or ciabatta. Toss romaine with some dressing. Layer chicken, lettuce mixture, extra Parmesan, and drizzle of dressing. Top with the other bun.
