  • 2 boneless chicken breasts, pounded thin

  • 1 egg, beaten

  • ½ cup all-purpose flour

For the Caesar Dressing (no anchovies or wine):

  • ½ cup mayonnaise

  • 1 tsp Dijon mustard

  • 1 small garlic clove, minced

  • Juice of ½ lemon

  • ¼ cup grated Parmesan cheese

  • Black pepper, to taste

For the Sandwich:

  • 2 ciabatta rolls or brioche buns

  • 2 cups chopped romaine lettuce

  • 2 tbsp grated Parmesan cheese

  • Extra Caesar dressing for drizzling


Instructions

  • Prep the Chicken:
    Pound the chicken to even thickness and season both sides with salt, pepper, and garlic powder.

  • Bread the Chicken:
    Coat each breast in flour, dip in egg, and press into panko breadcrumbs until evenly coated.

  • Cook the Chicken:

    • Pan-Fry: Heat olive oil in a skillet and cook 3–4 minutes per side until golden brown.

    • Air Fryer: Spray lightly with oil and cook at 400°F (200°C) for 8–10 minutes, flipping halfway.

  • Make the Caesar Dressing:
    In a bowl, whisk together mayonnaise, Dijon mustard, garlic, lemon juice, Parmesan, and pepper until smooth.

  • Assemble the Sandwich:
    Toast buns or ciabatta. Toss romaine with some dressing. Layer chicken, lettuce mixture, extra Parmesan, and drizzle of dressing. Top with the other bun.

For a lighter option, bake chicken at 425°F for 20 minutes instead of frying.
