Ingredients
4 boneless, skinless chicken breasts (or thighs)
1 cup apple cider (not vinegar)
½ cup heavy cream (or half-and-half)
1 tablespoon Dijon mustard
1 tablespoon olive oil
1 tablespoon butter
2 cloves garlic, minced
1 small shallot, diced
1 teaspoon fresh thyme leaves (or ½ teaspoon dried)
Salt and black pepper, to taste
Optional garnish: thin apple slices and fresh thyme sprigs
Instructions
Sear the Chicken: Heat olive oil and butter in a large skillet over medium-high heat. Season chicken with salt and pepper. Sear for 4–5 minutes per side until golden brown. Remove and set aside.
Make the Sauce: In the same pan, sauté garlic and shallots for 1–2 minutes. Pour in apple cider, scraping up any browned bits. Simmer until the liquid reduces by half.
Add Cream & Mustard: Lower heat and stir in Dijon mustard and heavy cream. Cook until the sauce thickens slightly.
Combine & Simmer: Return chicken to the skillet. Spoon sauce over the top. Cover and cook for 8–10 minutes, or until chicken is cooked through and sauce is creamy.
Serve: Garnish with thyme and optional apple slices. Serve with mashed potatoes, rice, or roasted vegetables.

For a dairy-free version, substitute coconut cream for heavy cream.
