Instructions

  1. Bake the Sweet Potatoes: Preheat the oven to 400°F (200°C). Scrub sweet potatoes clean and prick with a fork. Bake directly on a rack or on a lined tray for 45–50 minutes, until soft. Let cool slightly.

  2. Prepare the Filling: In a skillet, heat olive oil over medium heat. Add diced apples and cranberries. Sauté for 5–7 minutes until apples soften and cranberries burst. Stir in maple syrup, cinnamon, and a pinch of salt.

  3. Mash and Mix: Cut sweet potatoes in half lengthwise. Scoop out most of the flesh, leaving a thin shell. Mash the scooped flesh with the cranberry-apple mixture until creamy but textured.

  4. Stuff and Bake Again: Spoon the filling back into the sweet potato skins. Return to the oven and bake for 15 minutes until hot and slightly golden on top.

  5. Serve: Top with toasted nuts, herbs, and an optional drizzle of maple syrup before serving. Enjoy warm!
