  • 1 lb (450g) fresh crab meat
  • 1 cup heavy cream
  • 2 large eggs
  • 1/4 cup grated Parmesan cheese
  • 1 tsp Dijon mustard
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp paprika
  • 1/4 cup granulated sugar

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. In a mixing bowl, whisk together the eggs and heavy cream until smooth.
  3. Stir in the crab meat, Parmesan cheese, Dijon mustard, salt, pepper, and paprika. Mix until evenly combined.
  4. Pour the mixture into ramekins, filling them about three-quarters full.
  5. Place the ramekins in a baking dish and add hot water to the dish, filling it halfway up the sides of the ramekins (this is the water bath).
  6. Bake in the preheated oven for 30 minutes or until the mixture has set.
  7. Remove from the oven and sprinkle granulated sugar evenly over the top of each brulee.
  8. Using a kitchen torch, caramelize the sugar topping by moving the flame in small circles, ensuring it’s golden and crispy.
  9. Let the crab brulee cool for a minute, then serve warm.

Notes

  1. You can experiment with different herbs like chives or dill to add more flavor.
  2. For a twist, consider adding a pinch of cayenne pepper for a subtle heat or a splash of truffle oil for an upscale touch.
  3. If you don’t have a kitchen torch, you can use the broiler in your oven to caramelize the sugar, but be sure to watch it closely to avoid burning.
