- 1 cup heavy cream
- 2 large eggs
- 1/4 cup grated Parmesan cheese
- 1 tsp Dijon mustard
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp paprika
- 1/4 cup granulated sugar
Instructions
- Preheat your oven to 325°F (165°C).
- In a mixing bowl, whisk together the eggs and heavy cream until smooth.
- Stir in the crab meat, Parmesan cheese, Dijon mustard, salt, pepper, and paprika. Mix until evenly combined.
- Pour the mixture into ramekins, filling them about three-quarters full.
- Place the ramekins in a baking dish and add hot water to the dish, filling it halfway up the sides of the ramekins (this is the water bath).
- Bake in the preheated oven for 30 minutes or until the mixture has set.
- Remove from the oven and sprinkle granulated sugar evenly over the top of each brulee.
- Using a kitchen torch, caramelize the sugar topping by moving the flame in small circles, ensuring it’s golden and crispy.
- Let the crab brulee cool for a minute, then serve warm.
