Description
These light, nutty sugar cookies are made without butter, using coconut oil to create a rich, tender dough with a hint of coconut flavor. They’re perfect for anyone looking for a healthier, dairy-free alternative to traditional sugar cookies. Easy to make and fun to decorate, these cookies are versatile enough for any occasion.
Ingredients
Scale
- 1 ½ cups all-purpose flour
- 1 cup granulated sugar (plus extra for sprinkling)
- ½ cup coconut oil, melted
- 1 large egg
- 1 tsp vanilla extract
- ¼ tsp almond extract (optional, for a fun twist)
- ¼ tsp salt
- 1 tsp baking powder
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, sugar, salt, and baking powder.
- In a separate bowl, whisk the melted coconut oil, egg, and vanilla extract (and almond extract, if using).
- Gradually add the wet ingredients to the dry ingredients and stir until combined.
- Roll the dough into small balls (about 1 inch in diameter) and place them on the prepared baking sheet. Press each ball gently with the bottom of a glass or your fingers to flatten slightly.
- Sprinkle a little sugar over the top of each cookie for extra sweetness.
- Bake for 8-10 minutes, or until the edges are golden and the centers are set.
- Allow the cookies to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
Notes
- You can customize these cookies with lemon zest or a few drops of almond extract for added flavor.
- These cookies are perfect for decorating with icing or sprinkles for special occasions like holidays or birthdays.
- For a vegan version, substitute the egg with a flax egg (1 tbsp ground flaxseed mixed with 3 tbsp water).
