Cookie Recipes Without Butter: Delicious Treats Made Easy

  • Author: freshrecips
  • Total Time: 20 minutes
  • Yield: 12 cookies 1x

Description

These light, nutty sugar cookies are made without butter, using coconut oil to create a rich, tender dough with a hint of coconut flavor. They’re perfect for anyone looking for a healthier, dairy-free alternative to traditional sugar cookies. Easy to make and fun to decorate, these cookies are versatile enough for any occasion.

Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar (plus extra for sprinkling)
  • ½ cup coconut oil, melted
  • 1 large egg
  • 1 tsp vanilla extract
  • ¼ tsp almond extract (optional, for a fun twist)
  • ¼ tsp salt
  • 1 tsp baking powder

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, sugar, salt, and baking powder.
  3. In a separate bowl, whisk the melted coconut oil, egg, and vanilla extract (and almond extract, if using).
  4. Gradually add the wet ingredients to the dry ingredients and stir until combined.
  5. Roll the dough into small balls (about 1 inch in diameter) and place them on the prepared baking sheet. Press each ball gently with the bottom of a glass or your fingers to flatten slightly.
  6. Sprinkle a little sugar over the top of each cookie for extra sweetness.
  7. Bake for 8-10 minutes, or until the edges are golden and the centers are set.
  8. Allow the cookies to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.

Notes

  1. You can customize these cookies with lemon zest or a few drops of almond extract for added flavor.
  2. These cookies are perfect for decorating with icing or sprinkles for special occasions like holidays or birthdays.
  3. For a vegan version, substitute the egg with a flax egg (1 tbsp ground flaxseed mixed with 3 tbsp water).
