Ingredients
2 oranges, peeled and sliced
1 grapefruit, peeled and sliced
1 cup pomegranate seeds (arils)
2 tablespoons raw honey (or agave for vegan option)
1 tablespoon fresh lemon juice
1 tablespoon extra virgin olive oil
Pinch of sea salt
Fresh mint leaves for garnish
Optional: 2 tablespoons chopped pistachios or feta crumbles
Instructions
Prepare the citrus: Peel the oranges and grapefruit, removing any white pith. Slice into thin rounds or segments.
Extract the pomegranate seeds: Halve the pomegranate and gently tap the back with a wooden spoon over a bowl to release the seeds.
