With a perfect balance of tender chicken, creamy mayo, and tangy mustard, this chicken salad is a crowd-pleaser at picnics, gatherings, and everyday meals.
Ingredients
- Poach the Chicken Tenderloins: Fill a medium saucepan with enough water to cover the chicken. Add a pinch of salt, bring to a simmer, and cook the chicken tenderloins for 12-15 minutes until they reach an internal temperature of 165°F. Remove and let the chicken cool.
- Prepare Other Ingredients: While the chicken cools, chop the celery and hard-boiled eggs, then set aside in a large mixing bowl.
- Shred the Chicken: Once the chicken has cooled, shred it using two forks into bite-sized pieces. Add to the bowl with the celery and eggs.
- Mix the Dressing: Add mayonnaise, mustard, salt, pepper, and garlic powder to the bowl. Gently mix to combine all the ingredients.
- Chill: Transfer the chicken salad to an airtight container and refrigerate for at least 30 minutes to let the flavors meld.
- Serve: Enjoy the salad on sandwiches, wraps, or a bed of greens.
