This Chicken Burrito Casserole is a cheesy, comforting Tex-Mex favorite made with shredded chicken, beans, salsa, and tortillas. It’s perfect for busy weeknights, easy to assemble, and bakes into a golden, bubbling masterpiece the whole family will love.
Ingredients
3 cups cooked shredded chicken breast
6 large flour tortillas
1 can (15 oz) refried beans
1 cup salsa or enchilada sauce
½ cup sour cream
2 cups shredded cheddar and Monterey Jack cheese (divided)
1 cup black beans (rinsed and drained)
½ cup corn kernels
½ cup diced onion
1 tsp ground cumin
1 tsp chili powder
2 tbsp fresh cilantro (chopped, for garnish)
Instructions
Preheat oven: Set oven to 375°F (190°C). Grease a 9×13-inch baking dish.
Mix filling: In a large bowl, combine shredded chicken, black beans, corn, salsa, sour cream, cumin, and chili powder. Stir well.
Layer ingredients: Place two tortillas on the bottom of the dish. Spread one-third of the chicken mixture, a layer of refried beans, and some cheese.
Repeat layers: Continue layering tortillas, filling, and cheese until all ingredients are used. Finish with cheese and salsa on top.
Bake: Cover with foil and bake for 20 minutes. Remove foil and bake an additional 10–15 minutes until cheese is melted and bubbly.
Serve: Let it rest for 10 minutes before slicing. Garnish with cilantro and serve warm with lime wedges or guacamole.
Notes
For extra flavor, use smoked paprika or chipotle seasoning in the filling.
You can assemble the casserole a day in advance and refrigerate it before baking.
To freeze: Wrap tightly in foil and freeze up to 2 months. Reheat at 325°F for 25 minutes covered.
Great served with cilantro-lime rice, corn salad, or a fresh green salad.
