Instructions

  1. Boil the pasta in a large pot of salted water, following the package directions.
  2. While the pasta cooks, heat the olive oil or butter in a skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes, until fragrant.
  3. Add the Boursin cheese to the skillet and stir until it begins to melt, forming a creamy sauce.
  4. Add a splash (about 1/4 cup) of the reserved pasta water to the skillet to help adjust the consistency of the sauce. Stir well.
  5. Once the pasta is cooked, drain it, saving a cup of the cooking water.
  6. Toss the hot pasta directly into the skillet with the sauce, stirring to coat the pasta evenly in the creamy Boursin mixture.
  7. Season with salt and pepper to taste.
  8. Garnish with chopped parsley and grated Parmesan cheese, if desired. Serve immediately.
