Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper.
  2. In a large bowl, whisk together flour, black cocoa, sugar, baking soda, and salt.
  3. In a separate bowl, whisk buttermilk, oil, eggs, vinegar, and vanilla. Add black food coloring if desired.
  4. Gradually add the wet ingredients to the dry mixture. Mix on low speed just until smooth and combined — don’t overmix.
  5. Divide the batter evenly into the pans. Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
  6. Let the cakes rest in their pans for 10 minutes, then transfer to a wire rack to cool completely before frosting.
  7. Beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla. Mix until light and creamy.

Notes

Use black cocoa powder for the signature deep color and rich flavor.

For natural coloring, omit food dye and add 1 tsp espresso powder instead.
