  • 1 cup sugar
  • 6 tbsp butter
  • ½ cup heavy cream
  • Pinch of salt
  • ½ cup chopped roasted peanuts

Instructions

  1. Preheat the oven to 325°F (160°C). Grease a 9-inch springform pan.
  2. Make the crust: Combine graham cracker crumbs, melted butter, and sugar. Press into the pan’s bottom and bake for 8–10 minutes. Let cool.
  3. Prepare the filling: Beat cream cheese and sugar until smooth. Add mashed bananas, sour cream, caramel, and vanilla.
  4. Add eggs one at a time, mixing on low just until combined.
  5. Pour the batter over the cooled crust. Bake for 55–60 minutes until the edges are set and the center jiggles slightly.
  6. Cool gradually: Turn off the oven, crack the door open, and rest the cheesecake for 1 hour. Chill at least 4 hours or overnight.
  7. Make the caramel: In a saucepan, melt sugar until golden, stir in butter, then slowly add cream. Mix until smooth, add salt, and cool.
  8. Assemble: Pour cooled caramel over the chilled cheesecake and sprinkle roasted peanuts on top.
