- 1½ cups graham cracker crumbs

- 3 ripe bananas (mashed)
- 1 cup sugar
- 3 large eggs (room temperature)
- ½ cup sour cream
- ¼ cup caramel sauce
- 1 tsp vanilla extract
- For the Caramel Topping:
- 1 cup sugar
- 6 tbsp butter
- ½ cup heavy cream
- Pinch of salt
- ½ cup chopped roasted peanuts
Instructions
- Preheat the oven to 325°F (160°C). Grease a 9-inch springform pan.
- Make the crust: Combine graham cracker crumbs, melted butter, and sugar. Press into the pan’s bottom and bake for 8–10 minutes. Let cool.
- Prepare the filling: Beat cream cheese and sugar until smooth. Add mashed bananas, sour cream, caramel, and vanilla.
- Add eggs one at a time, mixing on low just until combined.
- Pour the batter over the cooled crust. Bake for 55–60 minutes until the edges are set and the center jiggles slightly.
- Cool gradually: Turn off the oven, crack the door open, and rest the cheesecake for 1 hour. Chill at least 4 hours or overnight.
- Make the caramel: In a saucepan, melt sugar until golden, stir in butter, then slowly add cream. Mix until smooth, add salt, and cool.
- Assemble: Pour cooled caramel over the chilled cheesecake and sprinkle roasted peanuts on top.
- Serve and enjoy! Slice and drizzle extra caramel if desired.

Use overripe bananas for extra sweetness and smooth texture.
