Ingredients
1 pound fresh asparagus, trimmed and chopped
2 tablespoons olive oil
1 small onion, finely diced
2 cloves garlic, minced
4 cups vegetable broth (or chicken broth)
1 medium potato, peeled and diced (optional for extra creaminess)
Juice of ½ lemon
Salt and black pepper to taste
Fresh herbs (parsley, chives) for garnish
Instructions
Prepare the asparagus: Wash thoroughly, trim woody ends, and cut into small pieces.
Sauté aromatics: In a medium pot, heat olive oil over medium heat. Add onion and sauté until translucent. Stir in garlic for 30 seconds.
Add asparagus and broth: Add asparagus (and potato if using). Pour in the broth and bring to a boil. Reduce heat and simmer 10–12 minutes until asparagus is tender.
Blend until smooth: Use an immersion blender to puree the soup until creamy. For a silkier texture, strain through a fine sieve.
Season and serve: Stir in lemon juice, salt, and pepper. Garnish with herbs or asparagus tips.
Notes
For a vegetarian asparagus soup, use vegetable broth and skip dairy.
For a no-cream version, blend thoroughly and drizzle olive oil for a smooth finish.
To make it richer, add a spoon of Greek yogurt or coconut milk.
Freeze leftovers for up to 2 months. Reheat gently on the stove.
