- 1 cup semolina (optional, for extra texture)
- 1 tsp salt
- 1 tbsp sugar
- 1 tsp instant yeast
- 1/2 cup warm water (adjust as needed)
- 1/4 cup vegetable oil (for dough)
- 1/4 cup melted butter (for greasing)
- Extra semolina (for dusting and rolling)
Instructions
- In a large mixing bowl, combine flour, semolina, salt, sugar, and instant yeast.
- Gradually add warm water and mix until the dough begins to come together.
- Knead the dough on a lightly floured surface for about 10 minutes, until it’s soft and smooth.
- Divide the dough into small balls (about the size of a golf ball).
- Coat each ball with some oil, cover with a clean cloth, and let them rest for 30 minutes to an hour.
- After resting, take each dough ball and flatten it into a thin circle (about 6-8 inches in diameter).
- Brush the surface of the dough with melted butter and sprinkle with a little semolina.
- Fold the dough into a square by folding the edges inward, then fold again to create a layered square.
- Heat a griddle or non-stick pan over medium heat and add a little oil.
- Place the folded dough square on the pan and cook for 2-3 minutes on each side, pressing gently with a spatula, until golden brown and crispy.
- Remove from the pan, and repeat with the remaining dough balls.
- Serve warm with honey, jam, or butter, and enjoy with Moroccan mint tea!

- For a sweet variation, you can add a sprinkle of cinnamon sugar before folding the dough.
